I think that when most of us hear the word sardine, we picture a small tin of colorless fish —or, in my case, the daily rush-hour subway commute. These very fresh and wonderfully shiny ones were waiting to be bought at the Rialto Market, in Venice—and maybe cooked up into sarde in saor (click here and scroll down for a recipe).
